How to Make Spicy Tamarind ( Rasavara) Potatoes

Introduction:

Spicy Tamarind Potatoes, also known as “Imli Aloo,” is a flavorful Indian side dish that combines the tanginess of tamarind with the richness of boiled potatoes. This dish is quick to prepare and makes a perfect accompaniment to any Indian meal. The combination of spices and the sweet-tangy tamarind sauce makes it an irresistible treat!

Ingredients:

• 500 grams potatoes

• Ginger (finely grated)

• 1 teaspoon mustard seeds

• 1 teaspoon coriander-cumin powder (dhanajiru)

• Green chilies (finely chopped)

• A pinch of asafoetida (hing)

• Tamarind pulp

• Jaggery (gud)

• 1 cup grated coconut

• Fresh coriander leaves (chopped)

• Oil

• Salt to taste

 

Instructions:

1. Boil and Prepare the Potatoes: Boil the potatoes in water until tender. Once cooled, peel and cut them                    into chunks.

2. Temper the Spices: In a pan, heat oil and add mustard seeds. Once they crackle, add asafoetida and                      saute for a few seconds.

3. Cook the Potatoes: Add the boiled potato chunks to the pan and sauté them in the tempered spices.

4. Add Tamarind and Spices: Mix tamarind pulp with water and add it to the pan. Stir in salt, jaggery,                            ginger, green chilies, coriander-cumin powder, and turmeric. Cook until the potatoes absorb the flavors                  and the sauce thickens.

5. Garnish and Serve: Remove from heat and garnish with grated coconut and fresh coriander leaves.                        Serve hot as a side dish.
