How to Make Sweet Shrikhand – Traditional Indian Dessert Recipe

Introduction:

Shrikhand is a traditional Indian dessert made from strained yogurt, flavored with saffron, cardamom, and garnished with pistachios and charoli. This creamy and rich sweet dish is perfect for festivals, special occasions, or as a delightful treat after a meal. Follow this simple recipe to make authentic Shrikhand at home!

Ingredients:

• 4 liters milk

• 1 kilogram sugar

• 10 grams each of charoli, cardamom, and pistachios

• Saffron

• Rose water

Instructions:

1. Prepare the Yogurt: Heat the milk and let it cool slightly. Once lukewarm, add yogurt to it and mix well. Cover the container with a cloth and a lid. Let it sit overnight to allow the yogurt to set properly.

2. Strain the Yogurt: Place a clean, fine muslin cloth in a strainer over a bowl. Pour the yogurt into the cloth and let it drain the excess whey. Once drained, tie the cloth with the yogurt into a bundle and hang it over a bowl for a few hours to remove all the water.

3. Mix the Shrikhand: In a kitchen mixer, blend the thick strained yogurt with sugar until smooth and creamy. Add rose water and saffron, and mix well until fully incorporated

4. Garnish and Serve: Pour the shrikhand into a serving dish and garnish with charoli, cardamom, and chopped pistachios. Refrigerate until chilled and serve.
