Ingredients:

  • Spices: Cumin powder, black pepper powder, dry mango powder, saunth (dried ginger) powder, turmeric powder (haldi), salt, and a pinch of sugar.
  • Aromatic Flavors: Onion powder, ginger powder, and dried mint.
  • Roasting Medium: Ghee or butter.
  • Base: 2 cups of makhana (fox nuts).

Method:

  1. In a mortar and pestle, combine cumin powder, black pepper powder, dry mango powder, saunth powder, turmeric, salt, and sugar. Add onion powder, ginger powder, and dried mint. Mix well to create a spice blend.
  2. Add a splash of oil to the spice mix and blend until smooth.
  3. In a kadhai, roast the makhanas with ghee or butter until crisp.
  4. Sprinkle the prepared spice mix generously over the roasted makhanas and toss well to coat evenly.
